Bean Salad With Peppers

Serves 4

450 grams of green beans with their ends trimmed and strings removed
1 yellow pepper cut vertically into 1/4 inch strips
1 tablespoon of grated parmesan cheese
1 teaspoon of grated fresh lemon peel
1/4 teaspoon of garlic powder
Salt and Pepper

Place saucepan over medium heat. When water boils, add green beans, cover saucepan and cook for 10 minutes. Add peppers and continue to cook for 10 more minutes or until green beans are tender.
Transfer beans and peppers to a serving bowl. Sprinkle evenly with remaining ingredients, mix and then serve.


Asian Turkey Burgers

Serves 4

1 lb lean ground turkey
1/2 cup finely chopped onion
1/3 cup finely chopped water chestnuts
3 Tablespoons finely chopped parsley
2 Tablespoons Worchestershire sauce
2 Tablespoons minced green bell pepper
1 Tablespoon soy sauce
1 Tablespoon cold water
2 teaspoons grated peeled fresh ginger
2 garlic cloves, minced
1/2 t salt substitute
1/4 t pepper
cooking spray

Combine all of the ingredients except cooking spray. Divide turkey mixture into 4 equal portions, shaping each into a 3/4 inch thick patty. Place a large nonstick pan coated with cooking spray over medium high heat until hot. Add patties. Cook 5 minutes on each side or until done. Can be eaten on a whole wheat bun with non-fat stir fry sauce.
